Homemade Garam Masala Recipe

Whilst for maximum flavour when making your blends, I usually advise using whole spices, sometimes this is not always practical or you may not have them available. In these cases it's perfectly fine to use pre-ground spices.

Ingredients: (makes about 7-8 tbsp)

The amount of ingredients can range from as little as five or six up to fifteen plus spices!

10 dried bay leaves
10 green cardamom pods
10 cloves
3 tbsp coriander seeds
2 tbsp cumin seeds
1½ tbsp black peppercorns
3 inch stick of cinnamon

tbsp = tablespoon
tsp = teaspoon

Directions:

Remove the seeds from the cardamom pods, discard the husks and roast and grind them along with the coriander, cumin, cloves and peppercorns.

Grind the bay leaves and cinnamon and mix with the roasted spices.

Store in an airtight jar out of direct sunlight and use within 2-3 months.


Potato Chaat Recipe

Now you've got your fresh garam masala, what do you do with it? You can of course add it to your curries, or why not try this easy starter?

Ingredients:

4-5 medium potatoes
1 small onion
2 teaspoons garam masala
Juice of 1 lemon
2 tablespoons of chopped cilantro (coriander) leaves
Salt to taste

Directions: Peel the potatoes and boil or steam until cooked. Let cool and slice into thin pieces.

In a bowl mix together the onion, lemon juice, garam masala and chopped herbs. Add the potato and make sure they get a good coating. Add salt if needed and serve.
