Homemade Pickling Spice Recipe - A Traditional Blend of Spices For Adding Great Flavours to Your Pickling Recipes

Homemade Pickling Spice Recipe

It's getting to that time of year when you may have a glut of vegetables that you'll never get around to eating. So pickling them is an excellent idea and you'll be able to enjoy them all through the winter months.

Ingredients: (makes 12 tbsp)

10-15 dried bay leaves
2 inch piece dried ginger
3 tbsp mustard seeds
3 tbsp peppercorns
2 tbsp allspice berries
2 tbsp coriander seeds (cilantro)
1 tbsp dill seeds
1 tbsp dried chili flakes
2 inch cinnamon stick

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Crumble the bay leaves and break up the cinnamon

  • Slice the ginger into pieces

  • Lightly crush or crack the seeds, berries and peppercorns

  • Mix everything and use according to your recipe

    Store in an airtight jar out of direct sunlight and use within 3 months.

    How to Toast and Grind

    A few people have asked how I toast and grind whole spices. It's really very easy...

  • Over a medium heat add your spices to a dry pan

  • Whilst stirring or shaking the pan; toast for a few minutes

  • When they start to darken and you can really smell their aromas, they're ready

  • Remove from the heat and let cool before grinding
