Homemade Egyptian Dukka - A Traditional Mix of Spices and Hazlenuts

Homemade Dukka

Travel to Egypt and you'll find versions of this traditional spice mix often infused in oil and used as a dip for bread and raw vegetables. Roasted chickpeas are an acceptable substitute if you don't have any hazlenuts.

Ingredients: (makes 8-9 tbsp)

10 tbsp shelled hazlenuts
5 tbsp sesame seeds
2 tbsp cilantro seeds (coriander)
1 tbsp cumin seeds
1 tbsp black peppercorns
2 tsp dried oregano
2 tsp sea salt

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Dry toast the hazlenuts, cilantro, cumin, peppercorns and sesame seeds over a medium for a few minutes whilst stirring (See below for tips on toasting)

  • When the hazlenuts shed their skin and you can smell the aromas of the other ingredients, they're ready

  • Let everything cool and discard the hazlenut skin

  • Finally, coarsely grind everything along with the oregano and salt

    Store in an airtight container out of direct sunlight and use within 3 months.

    How to Toast and Grind

    A few people have asked how I toast my whole spices. It's really very easy...

  • Over a medium heat add your spices to a dry pan

  • Whilst stirring or shaking the pan; toast for a few minutes

  • When they start to darken and you can really smell their aromas, they're ready

  • Remove from the heat and let cool before grinding
