Corned Beef Spices

If you're into corning meat; then this mix is far better than any you'll find in the store! If you're not into corning, this makes an excellent all-purpose seasoning.

Note: If you only have ground spices just use those, but reduce the amount you use by half.

Ingredients: (makes about 10 tbsp)

8 tbsp yellow mustard seeds (or 4 tbsp mustard powder)
10 dried bay leaves
3 tbsp white or black peppercorns
1½ tbsp allspice berries
1 tbsp celery seed
2 tsp ginger powder
2 tsp cilantro (coriander) seed

tbsp = tablespoon
tsp = teaspoon

Coarsely grind the mustard seeds, peppercorns, allspice, cilantro and celery seed and then grind along with the bay leaves. Mix in the ginger powder.

Store in an airtight jar out of direct sunlight. Use within 2-3 months.
