Recipe For Homemade Sausage Spices

This is a simple blend of dried herbs and spices for anyone who makes homemade sausages or burgers. It also makes a decent seasoning for any recipe that uses minced pork.

Ingredients: (makes about ½ a cup)

2 tbsp fennel seeds
1 tbsp dried basil
1 tbsp dried rosemary
1 tbsp dried oregano
1-2 tsp chili flakes
1 tsp cumin seeds
1 tsp garlic powder
1 tsp sea salt

tbsp = tablespoon
tsp = teaspoon


Coarsely grind the rosemary, salt, fennel seeds, cumin and chili flakes in your coffee grinder.

Mix with the garlic powder, dried basil and oregano.

Store in an airtight jar out of direct sunlight and use within 2-3 months.

As the main ingredient in this sausage seasoning is fennel, here are some facts about this spice...

  • Its botanical name is Foeniculum vulgare

  • It's a member of the parsley family

  • Florence fennel is the variety that produces the large edible roots

  • Ancient Romans regarded fennel as the herb of sight

  • The Roman author, Pliny the Elder, recommended the seeds and roots in his culinary writings

  • The fennel plant can grow up to 2.5 metres tall
