Homemade Greek Seasoning Recipe

This is a simple blend of dried herbs and spices that works great in a lot of recipes not just Greek cooking. I probably use it most often in homemade soups and my lentil recipes.

Note: If you only have ground spices just use those, but reduce the amount you use by half. Same with the flakes.

Ingredients: (makes about 10 tbsp)

3 tbsp dried Greek oregano (or any variety)
2 tbsp dried thyme
1 tbsp onion flakes
1 tbsp garlic flakes
1 tbsp black peppercorns
1 tbsp dried basil
1 x 2 inch cinnamon stick (or 1 tbsp ground)
1 tsp grated nutmeg
1-2 tsp sea salt

tbsp = tablespoon
tsp = teaspoon

Directions:

Break up the cinnamon stick and coarsely grind along with the peppercorns, salt, garlic and onion flakes.

Add to a bowl with the grated nutmeg and crumble in the dried herbs and mix together thoroughly.

Store in an airtight jar out of direct sunlight. Use within 2-3 months.
