A Mild Curry Powder Recipe For Your Lighter Dishes

This simple to make mild curry powder recipe is one of my favourites and probably the one I make and use the most.


And if you've a half decent spice cupboard, chances are you'll already have all the spices you need.

Of course you could buy mild curry powder from the store but I hope you'll try making your own.

Not only is it quick and easy, but your dishes will taste so much fresher and tastier.

Note: If you have them available, use whole spices where possible, but if it is more convenient you can substitute with pre-ground spices.

A Simple, Easy to Make Recipe for Curry Powder

Ingredients: makes 7-8 tbsp

3 tbsp coriander seeds (cilantro seeds)
2 tbsp cumin seeds
10 green cardamom pods
10 cloves
2 tsp ground turmeric
1 tsp ground ginger
1 tsp ground cinnamon

tbsp = tablespoon
tsp = teaspoon

Directions:

You can either use ground spices or, for a better taste and freshness, toast and grind the coriander, cloves, cumin and cardamom before combining. Click here for "step-by-step" info and photos on toasting, grinding and cooking with spices.

If toasting and grinding...

...Remove seeds from cardamom pods and lightly toast and grind along with the whole coriander, cumin and cloves. Mix in turmeric, ginger and cinnamon and store in a cool dark place.

I use about 1 tbsp of mix per curry, so based on cooking for 2 people, this will make enough for 5-6 dishes. This blend also works well in soups and any recipes that use mashed potatoes.

Homemade Versus Commercial Spice Blends...

Making your own curry spices means you know exactly what's in there...

And that means, no additives, colourings or preservatives! Which I avoid where possible.

Another issue I have with store bought curry powder is there might be too much salt, or just as bad too much chili; which can easily overwhelm the food.
